Abalone Slices with Oyster Sauce

Ingredients:

500g abalone meat (1 can)

8 pre-softened Chinese black mushrooms

1 precooked bamboo shoot

300g lettuce

6 1-inch sections green onion

6 slices ginger root

1T rice wine
Mixture1(1C stock, 1T oyster sauce, 1t soy sauce, 1/2t sugar, 1t sesame oil)

Mixture2(1/2T cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Cut abalone, black mushrooms and bamboo shoot into 24 slices each. Heat pan and 4T oil; stir-fry lettuce and 1/4t salt until vegetable is limp (add a little water if too dry); remove and arrange on serving plate around the edge.

2)Heat pan and 4T oil; stir-fry onion and ginger until fragrant; add rice wine, Mixture1 and let liquid come to a boil; strain-out onion and ginger and add black mushrooms slices; cook 2 minutes and add bamboo shoot and abalone slices. When liquid begins to boil, remove slices and arrange alternately on serving plate. Reheat liquid and add Mixture2 to thicken; add 1T oil and mix. Pour sauce over slices and serve.
