Braised Fish Slices in Sauce

Ingredients:

500g mackerel fillets*

3C oil for frying

Mixture1(1/2T rice wine, 1/2t salt)

Mixture2(1 egg white, 1/2T cornstarch)

Mixture3(1T chopped green onion, 1T chopped ginger root, 1.5T fermented rice wine or rice wine)

Mixture4(1/2t salt, 2t sugar, 2t cornstarch, 1C stock)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Diagonally cut fillets into thin slices; mix with Mixture1 and let soak 20 minutes; add Mixture2 and mix. Prepare mixtures Mixture3 and Mixture4.

2)Heat oil for deep-frying; deep-fry fish slices over low heat until color changes; remove and drain. Remove all but 3T oil from pan and reheat; stir-fry Mixture3 until fragrant; add Mixture4 and heat until liquid boils; add fish slices and 1T oil; toss ingredients lightly to mix together; remove and serve.

 

Remark:

*If mackerel is unavailable, substitute sea bass, swordfish or trout.

If preparing this dish for family, you may omit deep-frying and cook fish slices in boiling water until color changes.
