Dry Cooked String Beans

Ingredients:

500g string beans

30g chopped pork

2T chopped dried shrimp

4T chopped Szechuan pickled mustard green

3C oil for frying

1/2T chopped green onion

1/2t sesame oil

Mixture1(1/2T soy sauce, 1/2t sugar, 1/2T water)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Remove ends from string beans and pull away any "veiny" strings; rinse and drain; cut into 3-inch sections.

2)Heat oil for deep-frying; deep-fry string beans over medium heat for 5 minutes; remove and drain. Remove all but 3T oil from pan and reheat; stir-fry chopped pork until it changes color and add dried shrimp and Szechuan pickled mustard green and stir-fry 30 seconds. Add string beans, 1t rice wine and Mixture1; stir-fry until sauce is dry and add chopped green onion and 1/2t sesame oil; toss lightly to combine ingredients and remove to serving plate; serve.
