Fish Balls in Tomato Sauce

Ingredients:

300g grouper fillets*

1 medium-sized onion

3C oil for frying

6 1-inch sections green onion

6 slices ginger root

Mixture1(1t salt, 1/4t black pepper, 1/4t sesame oil, 1/2T cornstarch)

Mixture2(3T tomato ketchup, 1/2T sugar, 1t sesame oil, 1t cornstarch, 2T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Score fillets, lightly lengthwise and crosswise; cut into bite-size pieces and mix with Mixture1; let sit 20 minutes. Cut onion into bite-size pieces.

2)Heat oil for deep-frying; deep-fry fish pieces and onion pieces over medium heat for 1 minute; remove and drain. Remove all but 1T oil from pan; reheat and stir-fry green onion and ginger until fragrant; add Mixture2 and when liquid comes to a boil, add fish meat and onion; mix together and add 1t oil. Toss lightly to mix all ingredients and coat fish slices with sauce; remove to serving plate and serve.

 

Remark:

*If grouper is unavailable, substitute haddock or flounder.
