Ma Po's Bean Curd

Ingredients:

2 squares bean curd

60g chopped pork

1T hot bean paste*

2T 1/2-inch sections green onion or garlic stalk

1/4t Szechuan peppercorn powder**
Mixture1(1t chopped garlic, 1T chopped green onion, 1t chopped ginger root)

Mixture2(1T rice wine, 1C water, 1/2t salt, 1T soy sauce)

Mixture3(1.5t cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Remove hard edges dice bean curd.

2)Heat pan and 3T oil; stir-fry Mixture1 and chopped pork until fragrant, add Mixture2 and bean curd, cover and cook 3 minutes over low heat. Add Mixture3 to thicken and 1/2T oil; toss ingredients lightly; remove to serving plate sprinkle green onion or garlic sections and peppercorn powder on top; serve.

 

Remark:

*Hot bean paste: A thick, spicy paste made from ground hot red peppers and soy beans.

**If unavailable, omit.
