Peking Style Fried Bean Curd

Ingredients:

3 squares bean curd

1/2C flour

1 egg (beaten)

1T chopped green onion

1T chopped ginger root

1T rice wine
Mixture1(2t salt, 1/2T sesame oil, 1/2C stock)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Cut bean curd into 2.5"x1"x0.5" pieces; coat each piece lightly with flour, then dip into egg.

2)Heat pan and 2T oil; arrange bean curd piece by piece evenly at bottom of pan and fry over medium flame for 1 minute; when bean curd is a golden color, turn over, add 2T oil and fry until golden; add rice wine, scallion, ginger and Mixture1; pierce bean curd with a fork (to allow liquid to soak through); cook over low flame until liquid is absorbed by bean curd.
