Poached Fish in Sour Sauce |

Ingredients: 1 whole perch* 1t sesame oil 3 sprigs of coriander Mixture1(2 stalks green onion, 2 slices ginger root, 1T rice wine, 1T salt) Mixture2(1T oil, 1T rice wine, 15C water) Mixture3(2T shredded ginger root, 2T shredded green onion, 1T shredded hot red pepper, 2T shredded green pepper) Mixture4(6T vinegar, 6T sugar, 3T tomato ketchup, 3T water, 1t salt)
Mixture5(1/2T cornstarch, 1T water)
2)Heat pan and 1T oil from Mixture2; add rice wine and water. When water comes to a boil, place whole fish in water (water should cover fish); cover and when water reaches a boil, turn off heat. Let sit covered for 20 minutes. 3)Remove fish to serving plate; sprinkle a little black pepper on top. Heat 4T oil until smoking; pour over fish. 4)Heat pan and 4T oil; stir-fry Mixture3 until fragrant and add Mixture4. When liquid comes to a boil, add Mixture5 to thicken and 1t sesame oil. When sauce has thickened, pour over fish on serving plate; sprinkle coriander on top and serve.
Remark: If perch is unavailable, substitute flounder, halibut or sea bass.
