Poached Fish with Shredded Onion and Ginger

Ingredients:

1 whole sea bass or flounder

4T oil

Mixture1(2 stalks green onion, 2 slices ginger root, 1T rice wine, 20C water)

Mixture2(2 stalks green onion, 2 slices ginger root, 1T rice wine, 1T salt)

Mixture3(1/4t black pepper, 1/2C shredded green onion, 1/4C shredded ginger root)

Mixture4(3/4C fish stock, 1t salt, 1T soy sauce)


[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Rinse fish and drain. Heat pan and 3T oil and stir-fry green onion and ginger from Mixture1 until fragrant; add wine and water and bring liquid to a boil; add fish and cook 20 seconds; remove, drain and lightly scrape skin to clean (retain liquid). Rub fish with Mixture2 and let sit 30 minutes.

2)Place retained liquid from Mixture1 in a pan and bring liquid to a boil; add fish and turn off heat; let sit covered for 15 minutes; remove and drain. Place fish on serving plate (retain 3/4C stock for Mixture4).

3)Sprinkle Mixture3 over fish; heat 4T oil until very hot and pour over fish. Heat Mixture4 until boiling and pour fish; serve.
