Poached Fish with Shredded Onion and Ginger |

Ingredients: 1 whole sea bass or flounder 4T oil Mixture1(2 stalks green onion, 2 slices ginger root, 1T rice wine, 20C water) Mixture2(2 stalks green onion, 2 slices ginger root, 1T rice wine, 1T salt) Mixture3(1/4t black pepper, 1/2C shredded green onion, 1/4C shredded ginger root) Mixture4(3/4C fish stock, 1t salt, 1T soy sauce)
2)Place retained liquid from Mixture1 in a pan and bring liquid to a boil; add fish and turn off heat; let sit covered for 15 minutes; remove and drain. Place fish on serving plate (retain 3/4C stock for Mixture4). 3)Sprinkle Mixture3 over fish; heat 4T oil until very hot and pour over fish. Heat Mixture4 until boiling and pour fish; serve.
