Smoked Fish

Ingredients:

900g yellow trout fish

6C oil for frying

Mixture1(2 stalks green onion, 2 slices ginger root, 1T rice wine, 3T soy sauce, 1/2t five spice powder)

Mixture2(3T soy sauce, 2T sugar, 1.5T vinegar, 4T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Slice fish into pieces 1/3-inch thick; mix with Mixture1 and let sit for 20 minutes.

2)Heat oil for deep-fry fish over medium heat (about 10 minutes).

3)Heat 1T sesame oil; add Mixture2; wait until it comes to a boil; add fish pieces; cook until fish absorbs sauce; serve. Garnish with lettuce.
