Smoked Pomfret with Mayonnaise

Ingredients:

1 pomfret

1/2C mayonnaise

Mixture1(1T rice wine, 2t salt, 4T soy sauce, 1T sugar, 4 stalks green onion smashed, 4 slices ginger root)

Mixture2(1/2C tea leaves, 2T sugar)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Clean pomfret and cut fish into 4 sections; mix with Mixture1 and let sit 1 hour.

2)Lightly oil or roasting rack; place fish on grill.

3)Preheat over to 450 degree; place fish on grill in oven. Directly underneath grill place Mixture2 (contained in a pie pan or plate); bake 25 minutes. Remove fish to serving plate and brush outside lightly with sesame oil; portion mayonnaise onto serving plate and serve.

 

Remark:

The fumes from the tea and sugar will give the fish a delicious, smoky flavor during baking.

Garnish with tomato and cucumber slices, pickled vegetable salad and lettuce.
