Spicy Stir-Fried Prawns

Ingredients:

600g prawns

6C oil for frying

Mixture1(1T chopped garlic, 1T chopped ginger root, 1T chopped green onion)

Mixture2(1t hot bean paste*, 1T fermented rice wine**, 4T tomato ketchup)

Mixture3(1/2t salt, 1T sugar, 3T water, 1t cornstarch)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Cut antennae and other appendages from prawns; rinse and devein; drain.

2)Heat oil for deep-frying; deep-fry prawns 2 minutes over high heat; remove and drain. Remove all but 2T oil from pan; reheat and stir-fry Mixture1 until fragrant; add Mixture2 and stir-fry 1/2 minute; add prawns and Mixture3 and when mixture begins to boil, add 1T oil and toss lightly to mix ingredients and coat prawns with sauce; remove and portion onto serving plate; serve.

 

Remark:

*Hot bean paste: A thick, spicy paste made from ground hot red peppers and soy beans.

**If fermented rice wine is unavailable, substitute rice wine.
