Steamed Crap with Fermented Black Beans

Ingredients:

1 crap*

60g pork loin

1T soy sauce

1 10-by-7-inch piece pork net oil or caul fat**

Mixture1(1t salt, 1T rice wine, 1/4t black pepper)

Mixture2(2T fermented black beans, 1T chopped green onion, 1T chopped ginger root, 1T chopped hot red pepper)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Make a long vertical cut along the underside of the fish, slicing the fish in half, but leaving the halves connected along the back. Mix fish with Mixture1 and place opened fish flat on serving plate; lightly score each half two or three times.

2)Dice pork loin.

3)Heat pan and 3T oil; stir-fry diced pork until it changes color; push to side of pan and add Mixture2; stir-fry until fragrant and add 1T soy sauce. Remove mixture and portion over fish. Place pork net oil on top, and carefully tuck in edges under fish. Place in steamer and steam 15 minutes over high heat; remove to serving plate and serve immediately. Garnish with coriander.

 

Remark:

*Trout or sea bass may be substituted.

**In family cooking or if unavailable, omit pork net oil.
