Steamed Pomfret

Ingredients:

1 whole pomfret*

1t salt

2T shredded green onion

Mixture1(2T shredded pork loin, 1T shredded Chinese black mushroom, 2T shredded Szechuan pickled mustard green, 1T shredded ginger root)

Mixture2(1/2t soy sauce, 1/4t sugar, 1t rice wine)

Mixture3(1/4t black pepper, 1/2t sesame oil)


[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Rub fish exterior with salt; place 2 chopsticks on a heatproof place to form a rack for fish; place fish on chopsticks.

2)Mix Mixture1 and Mixture2; sprinkle mixture on top of fish and place in a steamer. Steam 10 minutes over high heat until meat is flaky and tender.

3)Remove fish to serving plate (retain liquid); pour Mixture3 on top of fish and sprinkle 2T shredded green onion on top. Heat 2T oil until very hot; pour on top of green onion. Heat retained liquid and pour over fish; serve.

 

Remark:

*Mackerel, haddock or striped bass may be substituted.
