Stir-Fried Abalone with Kidney

Ingredients:

1/2 can abalone meat

1 pork kidney

14 stalks Chinese broccoli*

6 1-inch sections green onion

6 slices ginger root

1t rice wine
Mixture1(1C stock, 2T oyster sauce, 1T soy sauce, 1/2t sugar, 1t sesame oil)

Mixture2(1T cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Cut abalone into thin slices; slice pork kidney in half; remove any white membrane and cut into thin slices; trim any dead leaves from broccoli and cut into 3-inch sections.

2)Heat 6C water until boiling; precook broccoli sections for 1 minute; remove and blanch kidney sections 20 seconds; remove. Place broccoli and kidney pieces separately in cold water to cool; drain.

3)Heat pan and 3T oil; briefly stir-fry kidney and remove.

4)Reheat pan and 3T oil; stir-fry onion and ginger until fragrant; add broccoli sections, 1t rice wine and Mixture1; stir-fry to mix together and when liquid boils, add Mixture2 to thicken; add kidney and abalone slices and 1T oil; toss ingredients lightly to mix and remove to serving plate; serve.

 

Remark:

*If Chinese broccoli is unavailable, substitute American broccoli or celery cabbage and cut stalks 1/2-inch thick, use as directed.
