Stir-Fried Abalone with Straw Mushrooms

Ingredients:

500g abalone meat

2C straw mushrooms

14 stalks green vegetable

6 1-inch sections green onion

6 slices ginger root

1t rice wine
Mixture1(1C stock, 2T oyster sauce, 1T soy sauce, 1/2t sugar, 1t sesame oil)

Mixture2(1T cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Cut abalone into paper-thin bite-size slices; remove any old leaves from vegetable and cut into 3-inch sections.

2)Place straw mushrooms in water to cover and cook 3 minutes; remove and cook vegetable sections for 1 minute; remove and place mushrooms and vegetable sections in cold water to cool; drain.

3)Heat pan and 3T oil; stir-fry vegetable sections with 1/3t salt for 20 seconds over high heat; remove and arrange sections around edge of serving plate.

4)Reheat pan and 3T oil; stir-fry green onion and ginger until fragrant; add straw mushrooms and stir-fry briefly. Add 1t rice wine and Mixture1; let mixture come to a boil and add Mixture2 to thicken; add abalone and 1t oil. Toss ingredients lightly to mix together and remove to serving plate; serve.
