Stir-Fried Bean Threads with Chopped Pork

Ingredients:
60g chopped pork
2 packages bean threads
Mixture1(2t chopped green onion, 1t chopped ginger root, 1/2T hot bean paste*)
Mixture2(3/4t salt, 2T soy sauce, 1t sugar, 1t cornstarch, 2C stock/water)

[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cut bean threads into 8-inch sections; soften in warm water and drain.

2)Heat pan and 4T oil; stir-fry chopped pork for 2 minutes and add Mixture1; stir-fry until fragrant and add bean threads and Mixture2; cover and simmer over low heat for about 8 minutes; remove to serving plate and serve. Garnish on top with coriander.

 

Remark:

*A thick, spicy paste made from ground hot red peppers and soy beans.
