Stir-Fried Cauliflower in Milk Sauce

Ingredients:

600g cauliflower

4C water

1/2T rice wine

1/4C evaporated milk

1T chopped precooked ham

Mixture1(2C stock, 1t salt)

Mixture2(1/2C stock, 1t salt)

Mixture3(1/2T cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Rinse and drain cauliflower; separate flowerets into bite-size pieces sections. Heat water until boiling and add cauliflower sections; cook 2 minutes; remove and drain.

2)Heat pan and 3T oil; add rice wine and Mixture1. When liquid boils, add cauliflower sections and cook 5 minutes over medium heat (liquid should be almost dry); remove and arrange cauliflower sections (flower-side down) to line the bottom of a medium-size bowl; pack lightly and invert onto a serving plate.

3)Heat pan and 1T oil; add Mixture2 and heat until boiling; add Mixture3 to thicken and slowly add evaporated milk, stirring constantly; add 1/2T oil and pour over cauliflower mold; sprinkle chopped ham on top and serve.
