Stir-Fried Chicken Shreds with Bean Sprouts

Ingredients:

300g chicken meat

250g bean sprouts

3C oil for frying

2t cornstarch

Mixture1(1/2t salt, 1t rice wine, 1 egg white)

Mixture2(1t rice wine, 1/2t salt, 1/4t sugar, 1/4t black pepper, 1/4t sesame oil, 1.5T water, 1t cornstarch)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cut chicken meat into shreds and mix with Mixture1; let sit 20 minutes. Mix with 2t cornstarch.

2)Remove discolored ends from bean sprouts and rinse; place in cold water to keep fresh; before cooking, drain.

3)Heat 3C oil for deep-frying; deep-fry chicken shreds about 1 minute over medium heat until color changes (stir to separate shreds); remove and drain. Remove all but 1T oil from pan; stir-fry bean sprouts briefly and add chicken shreds and Mixture2; stir-fry to mix together and remove to serving plate; serve.
