Stir-Fried Chinese Mushrooms with "Su Tsang"

Ingredients:
2 Chinese black mushrooms

5 rolls "su tsang"*

60g fresh bacon

1/2C shredded ginger root
Mixture1(1.5T soy sauce, 1/2t salt, 1/4t black pepper, 1t sesame oil)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Shred "su tsang" and soften black mushrooms in warm water; remove stems (discard) and shred caps. Cut bacon into shreds.

2)Heat pan and 3T oil; stir-fry bacon until it changes color and add black mushroom and "su tsang" shreds; stir-fry over high heat until fragrant; add shredded ginger and Mixture1. Lightly toss ingredients to mix together and remove to serving plate; serve.

 

Remark:

"su tsang" is long, thin roll made of wheat gluten. It may be purchased at a Chinese grocery store.
