Stir-Fried Crab Meat over Fried Rice Noodles

Ingredients:

1C crab meat*

1C fried rice noodles**

1/4C precooked ham, cut to 1/3-inch thin squares

1/4C minced green onion
Mixture1(1C egg white; lightly beaten, 1/2C evaporated milk, 1t salt, 1/2T cornstarch, 1/2T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Lightly break up fried rice noodles and place on serving plate. Heat pan and 2T oil; add crab meat and 1/2t rice wine; stir-fry briefly over high heat and remove.

2)Reheat pan and 4T oil; add pre-mixed Mixture1, ham slices, green onion and crab meat; stir-fry 10 seconds over high heat and portion over rice noodles; serve. Garnish with coriander.

 

Remark:

*Crab meat may be canned or fresh. If using fresh crab: clean crab and rub exterior with 2 stalks green onion, 2 slices ginger root and 1T rice wine. Place on a heatproof plate and steam 10-15 minutes over high heat; remove and remove meat from shell.

**To fry rice noodles: heat oil for deep-frying; deep-fry rice noodles until golden brown and expanded; remove and drain.
