Stir-Fried Crab Meat with Pork Tendons

Ingredients:

2 crabs

500g pre-softened pork tendons

6 1-inch sections green onion

6 slices ginger root

1/2T rice wine
Mixture1(1T rice wine, 2 sections green onion, 2 slices ginger root)

Mixture2(3C stock, 2t salt, 1/4t black pepper, 1t sesame oil)

Mixture3(1T cornstarch, 1T water)

Mixture4(1 egg white, 2T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Clean crabs, mix crabs with Mixture1 and place on a heatproof plate steam 10 minutes over high heat; remove meat from shells. Cut pork tendons into 1.5-inch sections.

2)Heat pan with 2T oil; fry green onion and ginger until fragrant, add Mixture2, let the mixture come to a boil, add pork tendons and cook 5 minutes over medium heat; add crab meat and when water boils, add Mixture3 to thicken. Beat ingredients of Mixture4 lightly; slowly add to crab meat mixture, while stirring constantly; add 2T oil and toss ingredients lightly to mix together; remove to serving plate and serve.
