Stir-Fried Crab with Green Pepper

Ingredients:

1kg small soft-shelled crabs

3 medium-sized green peppers

6C oil for frying

Mixture1(1T ginger wine, 1T cornstarch)

Mixture2(1T chopped green onion, 1T chopped ginger root, 1/2t chopped garlic, 1T fermented black beans)
Mixture3(1t salt, 1t sugar, 1T soy sauce, 1t sesame oil, 1/2C water)

Mixture4(1.5t cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Remove upper shell of crab's body; rinse inside parts, being careful not to dislodge roe; remove any dirty extraneous matter and cut crabs (still in shell) into big pieces; mix pieces with 1T ginger wine from Mixture1 and mix with cornstarch; let soak 20 minutes. Remove seeds from green peppers and cut into bite-size pieces.

2)Heat pan and 3T oil; stir-fry green peppers with 1T water and 1/2t salt for about 30 seconds over high heat; remove.

3)Heat oil for deep-frying; deep-fry crab pieces for 1 minute over high heat; remove and drain. Remove all but 3T oil from pan; reheat and stir-fry Mixture2 until fragrant; add 1T rice wine, crab pieces, and Mixture3; cover and cook 2 minutes over high heat; add Mixture4 to thicken and 1T oil and green pepper; toss lightly to mix ingredients and remove to serving plate; serve.
