Stir-Fried Oysters with Fermented Black Beans

Ingredients:

300g fresh shelled oysters, rinsed and drained
Mixture1(1/2C chopped green onion, 1T chopped ginger root, 1T chopped garlic, 2T fermented black beans)

Mixture2(3T soy sauce)

Mixture3(1t cornstarch, 1T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Carefully rinse oysters and drain. Boil 3C water; add oysters and cook 20 seconds; remove and drain.

2)Heat pan and 4T oil; stir-fry Mixture1 over high heat until fragrant; add oysters and Mixture2 stir-fry 20 seconds. Add Mixture3 to thicken, if necessary; remove and serve.

 

Remark:

Oyster should not be cooked too long, as over cooking will toughen them.
