Stir-Fried Shrimp in Sour Sauce

Ingredients:

300g raw, shelled shrimp

6C oil for frying

Mixture1(1/4t salt, 1/2t rice wine, 1/2 egg white, 2t cornstarch)

Mixture2(1 egg yolk, 1.5T cornstarch)
Mixture3(1/2T chopped green onion, 1/2T chopped ginger root, 1/2T chopped garlic, 1/2T chopped hot red pepper, 2T chopped green pepper)

Mixture4(1T sugar, 1T vinegar, 1T tomato ketchup, 1T water, 1/4t salt)

Mixture5(1/2t cornstarch, 1/2T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Rinse and devein shrimp; drain and mix with Mixture1; let sit 20 minutes. Before deep-frying, dip shrimp in egg yolk and mix with cornstarch.

2)Heat oil until medium hot; deep-fry shrimp over medium heat until changed in color (about 1 minute); remove, drain and place on serving plate.

3)Reheat pan and 2T oil; stir-fry Mixture3 until fragrant and add Mixture4. When mixture begins to boil, add Mixture5 to thicken; mix together and pour over shrimp; serve.
