Stir-Fried Shrimp with Garlic

Ingredients:

300g medium-size fresh shrimp

6C oil for frying

Mixture1(1t ginger wine*, 1/2T cornstarch)

Mixture2(1t salt, 2T chopped garlic, 1/2T chopped hot red pepper)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Rinse and cut antennae and all other appendages from shrimp (still in shells); devein and mix with Mixture1; let sit 20 minutes.

2)Heat oil for deep-frying; deep-fry shrimp over high heat for 1.5 minutes; remove and drain. Remove all oil from pan; add shrimp, Mixture2 and stir-fry until fragrant and ingredients are mixed well; remove to serving plate; serve.

 

Remark:

*A mixture of rice wine and the juices of smashed ginger root.
