Stir-Fried Squid with Assorted Vegetables

Ingredients:

600g fresh squid

6C oil for frying

6 1-inch sections green onion

6 slices ginger root

1 clove garlic, smashed
Mixture1(1/2C bite-size slices precooked bamboo shoot, 1/4C bite-size slices carrot, 1/4C bite-size pieces green pepper)

Mixture2(1t salt, 1/2t sugar, 1/4t black pepper, 1/2t sesame oil, 1t cornstarch, 1T water)

Method:
1)Remove head and tail from squid; discard. Remove skin and rinse, drain. Cut main section of body into 3 strips; lightly score meat lengthwise and crosswise and cut into bite-size pieces.

2)Heat oil for deep-frying; deep-fry squid meat, and Mixture1 for 20 seconds; remove and drain. Remove all but 4T oil from pan; reheat and stir-fry onion, ginger and garlic until fragrant; add squid, Mixture1 and Mixture2; toss lightly to mix all ingredients and remove to serving plate; serve.

 

Remark:

In family cooking, squid and vegetables need not be deep-fried; precook in boiling water and stir-fry as directed.
