Stir-Fried Squid with Dried Red Peppers

Ingredients:

600g fresh squid*

6C oil for frying

1/2C 2-inch sections dried red peppers

1/2t chopped garlic

1/2T rice wine
Mixture1(3T soy sauce, 1T sugar, 1t sesame oil, 1t worcestershire sauce, 1t cornstarch, 2T water)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Rinse squid and remove head and tail sections; discard. Cut central body piece into 4 strips; lightly score meat lengthwise and crosswise and cut sections into bite-size pieces (about 2.5x1.5 inches).

2)Boil 6C water and cook squid pieces about 20 seconds (pieces will curl up slightly); remove and drain.

3)Heat oil for deep-frying; deep-fry squid pieces about 1/2 minute; remove and drain. Remove all but 3T oil; reheat and stir-fry pepper sections and garlic until fragrant; add 1/2T rice wine, squid pieces and Mixture1. Toss lightly to mix ingredients and remove to serving plate; serve.

 

Remark:

*Dried squid should be soaked in 1t baking soda and water to cover until soft.

Dried red peppers are usually very hot; use as directed or decrease quantity according to your personal taste.
