Bok Choy Tofu

Ingredients: (Serves 2-4)

1. 500 gram Bok Choy, cut into mince

2. 100 gram Tofu, cut into very small cubes

3. 1 pc Tomato, quartered and sliced

4. 50 gram Ginger mince

5. Quarter tsp Salt

6. 30 ml Mushroom Stock

7. 4 tbsp Cooking Oil

Method:

1. Remove the root part of the bok choy, soak in water for 10 minutes and wash with running water.

2. Heat up a wok with oil, add in ginger mince to fry until fragrant. Add in tomato slices and fry evenly.

3. Put in the tofu cubes and add some water, continue to stir and cook for 10 minutes.

4. Add in the bok choy, salt and mushroom stock to cook for another 5 minutes or less.

5. Serve the bok choy tofu on plate while hot.
