Braised Pork Chop with Dried Oysters

Ingredients:
75g dried oysters
150g pork chop meat
1 red chili pepper
1 spring onion
3 slices ginger
1t white sesame
Mixture1(1/3T soy sauce, 1/2T sugar, 1/2T potato starch,
1T spice oil)
Mixture2(1T soy sauce, 1T rice wine, 1T sugar, 2C water, 1/4t ketchup)
[t = teaspoon; T = tablespoon; C = cup ]


Method:
1)Wash all the ingredients. Remove the footstalk and seeds of red chili pepper and cut it along with the spring onion and ginger slices into section.
2)Cut the pork chop meat into long strips. Mix well with Mixture1 and season for about 10 minutes. Take out and deep-fry until golden brown in hot oil. Take out and drain up for use.
3)Leave 1T oil in the pan and continue heating. Stir-fry the red chili pepper, spring onion and ginger. Add the dried oysters and slightly fry. Add the pork chop meat and Mixture2 and cook to boil in medium heat. Then, continue cooking in low heat for about
20 minutes until properly seasoned. Sprinkle the white sesame before take out and serve on plate.

TIP:
The fragrant and spicy fried dried oysters and seasoned pork chop compliment each other and encourage diners to eat more.
The oil temperature must not be too low so that the pork chop meat can be fried crispy and tasty otherwise it will become too soft, thereby diminishing the taste. It is also important to fry the meat in separate batches to prevent the whole lot of meat from reducing the oil temperature all of sudden, thereby resulting in the meat sticking onto the pan.
