Ingredients:
50g dried banded coral shrimps
1/2 chili pepper
3 cloves garlic
1/3 leeks
1T garlic flavored peanuts
Mixture1(1/4t each of salt, 1/4t chicken broth powder,
1/4t sugar, 1/4t white pepper powder)
Misture2(1/2t spice oil)
[t = teaspoon; T = tablespoon; C = cup ]
Method:
1)Peel the garlic, wash the red chili pepper and remove the footstalk
and seeds, wash the leek, and mince them all.
2)Deep-fry the banded coral shrimps until golden brown in boiled water
in low heat, take out and drain up for use.
3)Heat 1T oil in a pan and stir-fry the garlic, red chili pepper and
leek. Add and slightly fry the shrimps. Then, add the crushed
garlic-flavored peanuts and Mixture1 and stir-fry until the mixture is
properly seasoned. Finally sprinkle Mixture2 and serve on plate.
TIP:
Banded coral shrimp is also called flower shell
because of the reddish floral shell. Since it has a mild taste,
deep-frying with salt and pepper can maintain its tenderness and
original flavor and give a fresh and crunchy taste, making it a good
appetizer free of greasiness.
It is essential to deep fry the banded coral shrimps slowly in low heat
to prevent the excessive heat from affecting the crispiness of fried
shrimps otherwise the tender texture of the shrimps will be diminished. |
