Deep Fried Grass Carp with Spring Onion |

Ingredients: 250g middle section of grass carp 5 slices ginger 1/4t Sichuan pepper powder 1/2 red chili pepper 1/2 spring onion Mixture1(1/2t soy sauce, 1/2t spice oil, 1/2t sugar, 1/4t rice wine, 1/4t dark soy sauce) Mixture2(1/2t spice oil) [t = teaspoon; T = tablespoon; C= cup]
Method: 1)Wash and slice the grass carp. Deep-fry the fish slices until crispy in boiled oil in medium heat and take out and drain up for use. 2)Peel the garlic, wash the red chili pepper and remove the seeds, wash the spring onion and ginger, and mince them all. 3)Heat 1T of oil in a pan and stir fry the Sichuan pepper, garlic, red chili pepper, spring onion and ginger. Add the grass carp slices and fry them. Then, add Mixture1 and stir fry until it is properly mixed. Finally, sprinkle Mixture2 on top and serve on plate.
TIP: This is an excellent appetizer rich with fragrance. The crispy fried fish slices mixed with Sichuan pepper gives each bite an additional spicy taste. The good taste of this dish depends on the well-maintained crispiness of the fried fish slices in addition to a salty and fragrant flavor. Therefore, it is essential to completely drain up moisture from the fish slices before deep-frying otherwise the fried fish slices will be soft and less tasty. |
