Deep Fried Meat Balls Coated with Dried Small Shrimps

Ingredients:
1/2 spring onion
250g minced pork
1 egg
1/2 bowl dried small shrimps
4 cloves garlic
Mixture1(1/2T spice oil, 1/2T sugar, 1/2t white pepper powder,
1/2t flour, 1/2t potato starch)
[t = teaspoon; T = tablespoon; C = cup ]

 

Method:
1)Peel the garlic, wash the spring onion, and mince both. Mix well the minced pork with Mixture1 and eggs. Then, rub into balls for use.
2)Put the dried small shrimps on a plate. Coat the meat balls with the shrimps and slightly press the meat balls for use.
3)Heat 3 cups oil in a pan and slice the meat balls into the hot oil on the side of the pan. Deep-fry tge meat ball until golden brown in medium heat and continue to fry in high heat for about 10 seconds. Take out, drain up and serve on plate.

The tasty meat balls with dried small shrimps are crispy outside and juicy and tendor inside. To achieve this, all it takes is to fully control oil temperature and heat.
It is essential to mix the minced pork in one direction and add some potato starch. Thus, the meat balls will not easily break up and achieve a smoother and tender taste.
