Dried Anchovies with Fermented Black Beans

Ingredients:
1 small bowl dried anchovies
100g pork loin
2 green chili pepper
1 red chili pepper
1 spring onion
Mixture1(1t fermented black beans, 1/4t thin soy sauce, 1/4t
sugar, 1/2t rice wine)
Mixture2(1/2t spice oil)
[t = teaspoon; T = tablespoon; C = cup ]

Method:
1)Wash the green, red chili peppers and spring onion then cut them into diagonal sections.
2)Heat 2C oil to 160 degree celcius in a pan. Fry the dried anchovies to medium well and take out.
3)Leave 1t oil in the pan. Stir-fry the green and red chili peppers and slightly fry the pork loin. Add Mixture1 and mix well quickly. Sprinkle Mixture2 on top and serve on a plate.

TIP:
Fermented black beans with rich fragrance and taste in distinctive layers make an ideal appetizer with color, flavor and taste in combination with dried anchovies.
The oil temperature must be high enough for deep-frying the dried anchovies otherwise it is not easy to fry them crispy. A chop stick can be used for testing the oil temperature.
