Fried Spicy Dried Shrimps with XO Sauce

Ingredients:

150g dried shrimp

6 cloves garlic

3 cone peppers

appropriate amount of mung bean noodles

some spring onion (shredded)

Mixture1(1/2T soy sauce, 1/2T oyster sauce, 2T sugar, 1t spice oil, 1t chili oil)

[t = teaspoon; T = tablespoon; C= cup]

 

Method:

1)Rinse dried shrimps and drain. Soak water and take out. Wash, clean and drain again. Peel the garlic, wash the cone peppers, and mince both.

2)Heat 2C oil in a pan. Deep-fry the mung bean noodles until they expand and become crispy. Take out and crush them and spread the noodle crumbs on a plate evenly.

3)Heat 1t oil in another pan first. Put the dried shrimps, followed by garlic and all the cone pepper in the pan and stir fry evenly. Add Mixture1, and continue stirring until they are mixed. Put the mixture on the noodle crumbs and serve.

 

TIP:

The strong flavored XO sauce can remove the fishy strong smell of dried shrimps and enhance their tenderness. It can also make the dish look more appetizing.

This dish with the unique XO sauce on mung bean noodles makes a perfect appetizer or cold dish in a banquet. The cone pepper can be replaced by common chili pepper for diners preferring lighter taste or less spicy. It taste as good as original recipe.
