Sliced Pig Ear with Spring Onion

Ingredients:
1 piece pig ear
1 red chili pepper
1 spring onion
3 cloves garlic
1 stalk coriander
Mixture1(5 slices ginger, 2 spring onions, 1t Sichuan pepper corn, 1T rice wine)
Mixture2(1t chili oil, 1t worcestershire sauce, 1/2t salt, 1/2t sugar, 1/2t white vinegar, 1T spice oil)
[t = teaspoon; T = tablespoon; C = cup ]


Method:
1)Wash the pig ear and grill both sides slightly in low heat. Soak it in cold water, completely remove the remaining hair, and wash clean.
2)Peel and mince the garlic. Wash the red chili pepper, remove the footstalk and seeds, and shred it and the spring onion. Wash and mince the coriander.
3)Put hot water to medium height in a pan. Add the Mixture1 and the pig ear and the water should be over the ingredients. Boil the mixture in high heat and continue to cook for about 30 minutes in low heat. Take out and leave the ear to cool down, and slice it for use.
4)Put all the ingredients in a container and add Mixture2. Pickle for 15 minutes and serve on plate.

TIP:
This dish with rich fragrance of spring onion is easy to make and smells good. Controlling the heat and time is vital for cooking pig ears so that they are thoroughly cooked and maintain the optimal flexible texture.
The slightly grilled pig ear can be easily removed of the fine hair. Simmering it in low heat can further enhance the flavor.
