Squid with Chinese Pepper |

Ingredients: 200g squids 1/2 red chili pepper 1 spring onion 5 cloves garlic 3 stalks coriander 3 slices ginger Mixture1(1T thin soy sauce, 1t chili oil, 1t spice oil, 1/4t white vinegar, 1/4t sugar, 1/3t Sichuan pepper powder) [t = teaspoon; T = tablespoon; C= cup]
Method: 1)Remove the heads, intestine and ink of squids, wash, and remove the brown outer films. Mark crosses on the interior of the squids and cut them into small pieces. Boil the squid pieces in hot water, take out and drain, and put on plate. 2)Peel the garlic, wash the red chili pepper and remove the footstalk and seeds, wash the coriander and mince them all. 3)Put all the ingredients in a container and mix well with Mixture1. Finally, sprinkle the mixture on the squids and serve on plate.
TIP: Chinese pepper is the best compatible for appetizers. It can remove the fishy smell of seafood and add the tasty spicy flavor. Squids should not be boiled in hot water for too long otherwise the squids will taste stale and lose their soft texture. By sprinkling the freshly made Chinese pepper, its fragrance and rich spiciness can completely remove the fishy smell of squids. |
