Lotus Root Soup with Peanut and Mushroom Stem

Ingredients:

40 gram lotus root

3 pcs Red Dates (seeded)

2 pcs Candy Dates

15 gram Peanuts

15 gram Chinese Mushroom stems

100 ml Stock

Quarter teaspoon Salt


Method:

1) Peel lotus root, rinse and cut into pieces. Rinse red dates and candy dates.

2) Soak peanuts and Chinese mushrooms stems in water till soft. Remove harder part of mushroom stems.

3) Put all ingredients into stewing pot, pour in stock and salt, stew for 2 hours. Serve.
