Chicken Stewed In Wine

Ingredients:
1/2 chicken
6 slices Dong Guei*
2T Chuan Kong*
2T Qi Zi*
6 slices Green Pak Kei*
2 sticks cinnamon*
1 bottle rice wine
sufficient stock
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Rinse chicken and cut into bite-size pieces, blanch in boiling water.
Rinse to remove scum and drain. Put chicken in a pot, cover with rice
wine and add in Chinese herbs. Bring to a boil.
2)Light wine in the pot with a lighter. When the flames have died out,
remove from heat briefly. Add stock to dilute the rice wine to suit our
taste. Brint to a boil and cook for 20 minutes till the chicken is tender.
Pour to serving bowl and add a little of salt; serve.

Remark:
*Dong Guei, Chuan Kong, Qi Zi, Green Pak Kei and cinnamon, it can be
easily purchase at any Chinese herbal drug store.
