Chinese Spinach And Pig Liver Soup

Ingredients:
100g Chinese spinach
200g liver
3 slices ginger
6C stock
Mixture1(1t soy sauce, 2t cornstarch)
Mixture2(2t salt)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Clean spinach and cut into sections. Rinse liver, slice into 5mm pieces
and put into a bowl. Add Mixture1, mix well and let sit for 10 minutes.
Blanch briefly in boiling water, remove and drain.
2)Add 6C stock, ginger and spinach in a pot and bring to boil. When boil
again, add liver and salt, stir well. Pour into serving bowl; serve.
