Fragrant Beef Soup

Ingredients:
600g flank
5 star anise
1 stalk Chinese celery

1T rice wine

1t salt

1/4t black pepper
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cut beef into bite-size pieces, cook in boiling water for 2 minutes.
Rinse to remove scum and drain. Clean celery, remove old leaves and set
aside.
2)Bring half a pot of water to a boil, add beef, star anise, rice wine
and salt. Bring to a boil, cook over low heat for 2 hour till beef is
tender. Pour to a serving bowl, sprinkle with pepper, garnish with
celery leaves; serve.
