Fresh Fish and Vegetable Broth

Ingredients:
1 lb fillet of flounder/haddock
2 oz green vegetable*
1 cruller**
1C oil
1/2T crushed peanuts***
1t chopped green onion
Mixture1(2t salt, 6C stock)

[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Cut fish meat into paper-thin pieces; mix with 1T rice wine.
2)Trim any old leaves and hard stems from vegetable; cut cruller into
1/3-inch slices. Heat oil and deep frying cruller for 1 minute, remove
and drain.
3)In a large soup bowl, place green vegetable and cruller sections; add
fish slices, piece by piece; sprinkle crushed peanuts and chopped green
onion on top. Heat Mixture1 until boiling; pour over fish slices and
vegetable; sprinkle black pepper over all and stir; serve.

Remark:
*green vegetable can be substitute spinach, watercress, lettuce.
**cruller is type of crispy Chinese deep-fried cruller, if unavailable
can be substitute with toasted croutons, rice noodles.
***crushed peanut can be substitute with crushed sesame seeds
