Fresh Prawn Wantan Soup

Ingredients:
300g prawns, shelled
300g minced pork
2T minced shallots
3 stalks spring onions, chopped finely
Sufficient stock
600g large wantan wrappers
2 stalks Chinese celery, chopped finely
2T shallot crispy
Mixture1(1/4t salt, 1/8t black pepper, 1/2t sesame oil)
Mixture2(1/2t salt, 1/2 black pepper)

[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Mix and stir well of pork, shallots, spring onions and Mixture1 in a bowl.
2)Place wrapper on a plate then scoop 1t of paste in the centre, top with
1 prawn, moist edges of wrapper and seal to close. Repeated step2
till paste is used up.
3)Bring sufficient stock to a boil. Put desired amount of wantans in a
separate pot of boiling water. Cook for 25 minutes or till wantans float
to the top. Remove, drain and put into the stock. Pour into serving bowl,
add Mixture2 and garnish with chopped celery and shallot crispy; serve.
