Ingredients:
2oz pork loin
1T chopped, sauteed shallots*
1oz fish paste
few sprigs chopped coriander
Mixture1(1t soy sauce, 1t cornstarch, 1/4t sesame oil)
Mixture2(3C water, 2T shredded pre-softened Chinese black mushroom,
1/2C shredded, precooked bamboo shoot**)
Mixture3(1t salt, 1/2t sugar)
Mixture4(2T water, 2T cornstarch, 1/2T soy sauce, 1t worcestershire
sauce,
1/4t black pepper, 1/4t sesame oil)
[t = teaspoon; T = tablespoon; C = cup]
Method:
1)Slice pork loin into paper-thin bite-size pieces; soak 20 minutes
with Mixture1. Add chopped sauteed shallots, add fish paste and mix
ingredients.
2)Heat Mixture2 and when mixture starts to boil, add pork slices,
one by one to ensure that each piece is thoroughly coated with fish
paste; add Mixture3 and Mixture4 to thicken. Lastly add Mixture5,
chopped
coriander and stir; pour into soup bowl and serve.
*Shallots must first be minced and sauteed lightly in oil until brown;
remove and use.
