Red Rice Wine Chicken Soup

Ingredients:
1/2 chicken
100ml red rice wine lees*
100ml rice wine
1t salt
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Rinse chicken, cut into bite-size pieces, cook in boiling water.
Rinse to remove scum and blood, drain.
2)Boil 6C of water, when it comes to boil, add in chicken, red rice
wine lees and rice wine. Cook over medium heat for 1 hour to ensure
chicken is tender. Add salt, pour into serving bowl; serve.

Remark:
*Red rice wine lees are sediments left over from making red rice wine.
