Refreshing Intestine Soup

Ingredients:
300g pig intestines
10g barley, lotus seeds, Kiam Sei & Hok Ling
8C water
Mixture1(1t rice wine, 1/4t salt)
[t = teaspoon; T = tablespoon; C = cup]


Method:
1)Remove any fat from intestine, cut the intestine horizontally about
30inches long and turn inside out. Rub intestine with flour to remove
slimy residue. Rinse thoroughly.
2)Cook in boiling water for 5 minutes, remove and drain. Put in a pot,
add 8C water and cook additional of 10 minutes. Remove from heat and
let sit for 20 minutes. Cut diagonally to 3cm pieces and set aside.
3)Add barley, lotus seeds, Kiam Sei, Hok Ling and bring to boil.
When it boils again, add intestines to the pot and cook additional
of 30 minutes. Pour into a serving bowl, add Mixture1, sitr well before
serving.
