Shrimp Balls in Mushroom Soup

Ingredients:
6 oz. shelled shrimp
1 oz. pork fat
1 C mushrooms
2 stalks green onion
Mixture1(1/2t rice wine, 1/2t salt, 1/4t black pepper, 1/2t sesame oil,
1 egg white, 1T cornstarch)
Mixture2(1/2T rice wine, 6C stock, 2t salt)
[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Wash shrimp, drain and smash with cleaver. Chop finely both shrimp and
pork fat; then mix well in a bowl with Mixture1; thoroughly combine.
2)Cook mushrooms in boiling water until soft, remove and drain.
3)Heat Mixture2 in a pot with medium heat and cook for 5 minutes.
Make shrimp paste into balls size and add into pot. When liquid boils again,
add green onion; remove and serve.
