Ingredients:
1 sparerib
6C oil for frying
2 stalks green onion
1 Chinese turnip
2T chopped coriander
Mixture1(1T soy sauce, 1/2t salt, 2t sugar, 1/2t 5-spice powder,
1/2T vinegar, 1/2T chopped garlic, 2T cornstarch)
Mixture2(4C stock, 1t salt, 1/4t black pepper, 1/4t sesame oil,
1t rice wine)
[t = teaspoon; T = tablespoon; C = cup]
Method:
1)Cut sparerib into 1-inch sections, add Mixture1 and soak for 30
minutes.
Add cornstarch and mix before deep-frying. Cook turnip 10 minutes in
boiling water; remove, drain and cut into bite-size pieces.
2)Deep fry spareribs for 5 minutes; add green onion stalks and deep-fry
an additional minute; remove and drain. Arrange spareribs and onions in
a serving bowl; place in steamer and steam 30 minutes over medium heat;
remove and place turnip pieces on top. Heat Mixture2 until boiling
and pour over spareribs mold; sprinkle coriander on top and serve.
