Szechuan Mustard Green and Bean Thread Soup

Ingredients:
2oz pork loin
Mixture1(1t soy sauce, 1t cornstarch)
Mixture2(3C water, 1t salt)
Mixture3(1/2 package bean threads, 1/4C thinly slice Szechuan pickled
mustard green, 1/2C thinly sliced cucumbers)
Mixture4(1T chopped green onion, 1/4t black pepper, 1/2t sesame oil,
1/2t soy sauce)

[t = teaspoon; T = tablespoon; C = cup]

Method:
1)Slice pork loin into paper-thin slices; mix with Mixture1. Soften bean
threads in warm water and drain; cut in half.
2)Heat pan and 2T oil; stir-fry pork slices till color changes; remove.
Heat Mixture2 until boiling and add pork slices and Mixture3. Prepare
Mixture4 and place in serving bowl; when mixture boils again, pour into
serving bowl and serve.

Remark:
Szechuan pickled mustard green and cucumber slices should not be over
cooked to retain their crunchiness.
