Stir-Fried Shredded Pork with Qi Zi

Ingredients:

250g lean pork

20g Qi Zi

100g celtuce

20g wood ear

20g white fungus

15g sectioned spring onion

5g ginger slices

35g vegetable oil

10g rice wine

[t = teaspoon; T = tablespoon; C = cup]

 

Marinade:

10g light soy sauce

25g caltrop starch

 

Seasoning:

3g sugar

5g salt

 

Method:

1.Rinse and shred the lean pork. Marinate it. Skin the celtuce. Rinse and shred.

2.Soak wood ear and white fungus in warm water for 30 minutes. Remove the stem. Rinse and shred them. Rinse and soak Qi Zi until fine.

3.Heat vegetable oil and stir-fried ginger and spring onion until fragrant. Add shredded pork and stir-fried until half done. Sprinkle wine. Stir in wood ear, white fungus, celtuce and Qi Zi until done. Season and serve.
