Malay Beef Rendang in Soy Sauce (Rendang Berkicap)

Ingredients: (Serves 4-6)

500 grams Minced Beef

20 Dried Red Chillies

1 pod Garlic

8 Shallots

4 cm piece Ginger

4 cm piece gelangal

4 tbsp Vinegar

Quarter cup thick Soy Sauce

1 tsp Sugar

Quarter tsp Salt

For Frying Seasoning: 3 shallots, 4 cloves garlic, 2 cm cinnamon stick, half cup coconut oil

Method:

1. Wash and cut the beef into broad pieces, boil in water until tender. Drain and set stock aside.

2. Grind dried chillies, garlic, gingler, shallots, galangal and sugar together finely.

3. Rub the grounded ingredients on to the beef with soy sauce.

4. Sliced shallots and garlic. Fry the cinnamon stick and sliced shallots and garlic with some oil until fragrant.

5. Put in beef and continue frying. Add some vinegar and the beef stock.

6. When the gravy almost dry, put in some salt to taste, and continue to fry until fragrant.

7. Remove from fire and serve while hot.
